Taco Soup: with Fresh Avocado, Sour Cream & Chips

So we are thinking out of the box and cooking up taco soup. It’s a great way to change up the taco routine and the recipe makes lot of soup and is great for serving a big hungry crowd, and makes for great leftovers in the fridge.

Ingredients for Soup
1-1/14 pound of ground beef (can substitute turkey or chunks of stew meat as well)
2 cloves of chopped garlic
1 small onion (chopped)
1 4 oz. can chopped green chiles
1 15 oz. can of pinto beans (if your grocery store sells Goya brands look for spicy pinto beans)

1 8 ounce can diced Mexican-style tomatoes
1 cup fresh diced tomatoes 
1 15 oz. can white hominy (or corn per your preference)
1 package of 1-1 ¼ ounce package of taco seasoning mix
Garnish (Note all of the garnishes are optional)
Sour cream
Corn chips
Fresh Avocado
Grated cheese
Chopped green onions

Add chopped garlic to a tablespoon of oil in a large stovetop stockpot or pan. Add beef, chopped onion, and chiles and cook until brown. Drain fat next adding the fresh and can of diced Mexican-style tomatoes (include liquid from the can). Add the can of hominy (or corn). Lastly add the pinto beans (including liquid from can). Next add 2 cups of water and a package of taco seasoning mix. Note: some people add a package of ranch dressing mix here as well (I usually exclude just due to a low tolerance for salt – but consider it if you like a more flavored soup). Bring this entire mixture to a boil and then cover and simmer for about 30 minutes (depending if a lot of water evaporates – you may want to add more water as necessary).

To make it look like our picture, ladle soup into bowls. Right before serving and then add sliced fresh avocado to each bowl. Add a dollop of sour cream and corn chips to each bowl. Add cheese and chopped green onions to each bowl as desired.

Enjoy! I love to make this soup to have a hearty meal and it’s quick and easy for times where I don’t have a lot time to spend in the kitchen. Note another option for preparation is to reach the point in the recipe where you have just cooked the meat and drained the fat. And then you can also proceed by placing all soup ingredients in a slow cooker on low for 4-6 hours.
