Frozen Watermelon Margarita

 

margaritaIn these margaritas, frozen watermelon takes the place of ice. Blending in the seeds gives the drinks a striking speckled appearance.  (And a little fiber too…)

 

 

 

Ingredients

3-pound piece watermelon
1 cup white Tequila
1/2 cup fresh lime juice (from about 4 limes)
1/4 cup sugar, or to taste

 

Directions

Remove rind from watermelon and cut enough fruit into 1-inch pieces to measure 5 cups. Freeze watermelon in a sealable plastic bag at least 3 hours and up to 1 week.

In a 5- to 6-cup blender blend frozen watermelon with remaining ingredients until thick and smooth. Makes 6 Servings

Gourmet

Snow Cap Margarita

Ingredients

4 ounces (1/2 cup) tequila
1/2 cup well-stirred canned cream of coconut such as Coco Lopez
zest of 2 lime
6 tablespoons fresh lime juice, or to taste

Garnish: 2 lime slice

 

Directions

In a blender blend all ingredients with 1 cup ice cubes until completely smooth. Serve Margarita garnished with lime slice in a stemmed glass. Makes 2 Servings

Beer Margarita

Ingredients

Almost any tequila will do — but after experimenting with several different beers, generally a Mexican beer, -a lighter-style lager here- Dos XX, Corona, Pacifico etc. This recipe can be readily increased to serve a large crowd.

1 lime, cut into 8 wedges
1/4 cup coarse salt
2 chilled 12-oz bottles beer (not dark; preferably a lighter-style lager)
1/2 cup thawed frozen limeade concentrate
1/2 cup chilled tequila
Ice cubes

 

Directions

Rub lime wedges around rims of 4 Margarita glasses.

Dip rims in salt to coat lightly.

In a medium pitcher, combine beer, limeade, and tequila.

Fill prepared glasses with ice, then with margarita mixture.

Garnish with remaining lime wedges.

Serve immediately. Serves 4.

 Margaritas Clásicas

 

Mexican and Key limes are slightly sweeter than Persian limes (standard supermarket variety). Make these Margaritas two at a time.

 

 

Ingredients

1 lime, cut crosswise into 5 slices
Coarse salt

1 cup ice cubes
1/2 cup premium tequila
1/4 cup triple sec or other orange liqueur
2 tablespoons fresh lime juice

Directions
 

Place 3 lime slices in single layer on small plate. Pour enough salt on another small plate to reach depth of 1/4 inch. Lightly press rims of 2 Margarita glasses onto lime slices, twisting to extract juices and coat rims. Dip moistened rims into salt to coat lightly.

 

Combine ice cubes, tequila, triple sec, and lime juice in cocktail shaker. Shake until outside of shaker becomes frosty. Strain mixture into prepared glasses. Garnish rims with 2 remaining lime slices and serve immediately. Serves 2.

Classic Frozen Margarita


Ingredients

2 lime wedges

Coarse salt for coating the edge

4 ounces white tequila

2 ounces triple sec or cointreau

1 1/2 ounces freshly squeezed lime juice

6 to 8 ice cubes or 1 1/2 scoops crushed ice


Directions
Rub the lime wedge around the rim of a margarita glass and then dip the glass into a plate of coarse salt.Combine the remaining ingredients in a blender and blend until smooth, about five to 10 seconds. Makes 2

 

Michelada

From our U.S. border states, trickling up from Mexico, Michelada is roughly translated as "my cold beer".  This spicy cocktail concoction is a beer with lime and some peppery seasoning. It's kind of like a Tomato Beer without the tomato.

 

Ingredients
1 lime, preferably a Key lime
Coarse salt
4 dashes Worcestershire sauce
2 dashes soy sauce
2 dashes Tabasco sauce
2 pinch black pepper
2 dashes
Maggi seasoning, optional
2 beers, preferably a dark Mexican beer like Negra Modelo.

 

Directions
Squeeze the juice from the lime and reserve. Salt the rim of a highball glass by rubbing it with the lime and dipping it in coarse salt. Fill with ice. Add lime juice, Worcestershire, soy sauce, Tabasco, pepper and Maggi, if desired. Pour in beer, stir and serve, adding more beer as you sip. Yield: 1 cocktail
